My nephew Henry and niece Halliday came to visit this week. I invented these pancakes for them, and they loved 'em.
Egg and Cottage Cheese Pancakes
6 eggs
1 cup cottage cheese
2 tablespoons Stevia in the Raw (or other sweetener to equal 2 tablespoons of sugar)
1 1/2 teaspoons baking powder
1/3 cup coconut flour
1 teaspoon vanilla
1/4 cup vanilla whey protein powder
1 tablespoon butter -- or as needed
Simply assemble everything but the butter in your blender, and run until you have a smooth batter -- you may want to scrape down the sides of the blender once or twice. Now, let your batter sit for a few minutes -- it will thicken a bit on standing. In the meanwhile...
Put your biggest skillet or a griddle over medium heat -- I use my huge skillet that goes across two burners. Let it get hot before you try to cook your pancakes.
I used a tablespoon of butter to grease my hot skillet even though it's got a good non-stick surface. Then simply pour the batter out of the blender onto the hot skillet or griddle, and fry the way you would any pancakes.
You can serve these with butter and sugar-free pancake syrup if you like, but I prefer low sugar preserves. A little Splenda mixed with cinnamon is nice, too.

question about coconut flour
I have been wanting to make this but I need to get the coconut flour. Today I was at my favorite grocery store and was browsing the international section. In the Indian food area they had a product called "coconut powder".It was not sweetened. Does anyone out there know if that is the same thing as coconut flour? It was significantly less expensive than the flour which is sold in the "natural foods" section of the store, where most everything is pricey.
I will likely get my coconut flour from vitacost as per Dana's recommendation, but wanted first to see if anyone was familiar with this coconut powder.
Coconut powder is for making
Coconut powder is for making coconut milk. you wouldnt want to sub it for coconut flour. coconut flour sucks up liquid and has a tendancy to dry baked goods out.

another modification;
I made a smaller version in the magic bullet with the ingredients on hand. They had a crepe consistency. I had two for breakfast with peanut butter and syrup and two for lunch with ham and cheese in the middle. Yum!!! Thank you for the recipe.

Egg and yogurt Pancakes
2 eggs
1/3 cup yogurt (a la Dana)
2 teaspoons sweetener

4 teaspoons vanilla whey protein powder
1 tablespoon coconut oil
A more savory version
After 7 years of low-carb living, we're no longer into sweets so I made a version of these pancakes with no sweetener. I even used Bob's red Mill whey protein - no added sugars or sweeteners. There was plenty of sweet taste from the coconut flour and we LOVE these.
So essentially I made your recipe, just with no stevia and no sweetened whey. Now I keep a stack of these in the fridge for a truly healthy snack. We love them plain, or warmed with peanut butter inside. They also make a killer grilled cheese 'sandwich' and I plan on doing a version with flax or almond meal instead of the coconut and making tacos.
Using the Uncle Bob's whey and dry cottage cheese (instead of creamed), the carb content has dropped to 1.4 net carbs. 1.4 DELICIOUS carbs I must say.

I just made a modified
I just made a modified version of this. I used 5 tablespoons of marscapone cheese (because I had no cottage cheese and my ricotta was moldy). I used 2 eggs, liquid stevia drops, 1/6 C of coconut flour (I can't have much of this, it upsets my system) and 1/6 C almond meal and 1/8 C whey protein powder. I also added some maple syrup flavoring since I had it in the house. I have no low-carb jam or sugar-free syrup right now so I spread a 1/2 teaspoon of raw honey on them. I feel full like I just ate a huge stack of pancakes at the IHOP, but I won't reap the carb coma. Thanks for lunch Dana! :)

Protein powder
I have been trying to find a sub for protein powders. Can't use them because hubby gets migraines from them. Any ideas?

Huh. All of 'em? The other variety I keep on hand is rice protein; should have a very different amino acid profile to the whey protein.
Other than that, I'd probably try almond meal, but you'll get a somewhat lower protein result. Still plenty from the eggs and cottage cheese, though.

So when you say 'vanilla whey powder' do you have a certain brand? I have found that all the flavored whey powders have so many carbs. For my protein shake I use an unsweetened whey powder that has 1 gram of carb and 19 grams of protein. Do you think I can use that?

I use Designer Whey brand; it's widely available at GNC stores. It's also available through Vitacost.com, and they have it cheaper, IIRC -- but of course, you pay shipping and have to wait for it.
