Just In Time for Christmas: Gingersnaps!

Gingersnaps
Crisp and gingery-cinnamony, these cookies are nothing short of extraordinary.

1/4 cup butter
1/2 cup coconut oil
1 cup Splenda
1/4 cup sugar alcohol (I'd use erythritol now, but I originally used maltitol)
1 tablespoon blackstrap molasses (or dark molasses)
1 egg
1 cup almond meal
1 cup vanilla whey protein powder
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
2 teaspoons cinnamon
1/2 teaspoon ground cloves

Using your electric mixer, beat the butter, coconut oil, Splenda, sugar alcohol sweetener, blackstrap, and egg together until mixture is creamy and fluffy.

Beat in the almond meal, vanilla whey protein powder, and gluten, then the baking soda, salt and spices.

Dough will be fairly soft, but cohesive. Spoon by the scant tablespoon onto ungreased cookie sheets, shaping a bit with the fingers to make little balls. Flatten balls slightly with the back of your spoon or fingers. Keep in mind when placing cookies on sheets that they will spread.

Bake at 350 for about 7-9 minutes, or until just getting golden around the edges. Cool on wire racks, and store in an air-tight container.

About 42 cookies, each with: 76 Calories; 5g Fat; 7g Protein; 2g Carbohydrate; trace Dietary Fiber; 2 grams usable carb.

Can I use erythritol in place of the 1 cup of splenda? and how much - i have the powdered and granular.

I get my almond flour from honeyville.com . They sell a 5 lbs. bag for $39.00.

I usually get almond flour at my grocery store, but as you well know, it is very pricey. I don't think VitaCost carries it. Do you happen to know of an online retailer that sells it for a good price? I would love to see if I can score a better deal!

Almond Flour/Meal

I don't, though I'd bet you could find it on Amazon.com -- you can find everything else.

I often make almond meal; it's easy if you have a good food processor. Buy shelled almonds -- which aren't dirt cheap, by any means, but usually run cheaper than almond meal -- dump 'em in with the S-blade in place, and run till you've got something the texture of corn meal.

I made these - twice. Yesterday, I thought I followed the recipe strictly, but they seemed to leak coconut oil all over. :-O Plus I'm not all that crazy about all almond meal. So today I tried again - cut the coconut oil to a 1/3 cup and made the 1 cup almond meal into 1/2 cup that and 1/2 cup coconut flour instead. They came out really good. :-D

I am also highly avoiding gluten and wheat these days, a la "Wheat Belly". ;-) Makes it really hard to even do a wrap, though. It looks like you are heading in a paleo direction, which is wonderful - can't wait for your paleo book!!!

ingredient question

Some of your recipes call for vanilla whey protein powder. Is whey powder the same thing? (No additives or mixers, just straight whey powder.)

This recipe looks great, but is there any good substitute for the whey powder that isn't too high carb? I keep Kosher, and it's easier for me to bake everything Pareve (no dairy ingredients)

(if you're wondering what I'd do about the butter, I substitute a healthy shortening made from expeller pressed oils, no hydrogenated fats.....)

Great Christmas Cookie!

This were perfect for Christmas ... even my non-low carb family ate them up. Mom's favorite cookie is gingersnap and she loved these! Have a very merry Christmas and wonderful New Year!

I just want to tell you how much I've appreciated your blog over the years.

I really appreciate the fact that you keep an open mind about different lower carb eating plans, and more importantly, I've never seen you really bash "other" diets like some low carb commentators do. For example, I follow the South Beach diet. I like its structure and 3 phases. I'm not very strict with avoiding saturated fats, but I do follow the structure of the plan with its limitations on starches/fruits. I find all your recipes very adaptable and delicious!

I look forward to any new cookbooks you have on the horizon. Thanks.
