Kool-Aid Kupcakes

1/2 cup (1 stick) salted butter, melted
5 eggs
3/4 c Torani SF Lemon Syrup
1 big teaspoon vanilla
3/4 c coconut flour
3/4 teaspoon baking powder
1 packet pink lemonade Kool-Aid (regular with no sugar added, not the sugar-free kind) (I've also made this recipe with the mandarin orange flavor, and it was great.)
1 ½ T poppy seeds (optional)

Mix all together and bake! I made 12 cupcakes with this. Bake at 350 for about 12 minutes or cooked through.

Icing:

1 package cream cheese room temp
2 tablespoon butter room temp
1/2 teaspoon vanilla
1 zest of a lemon
juice of half a lemon (or more if desired)
sweeten to taste (I use 1 tsp. of Fiberfit)

Blend all together. These are good at room temp or even cold. Should be stored in fridge.
