Happy Thanksgiving!

Happy Thanksgiving, all! This year it's just me and That Nice Boy I Married for Thanksgiving dinner, which is fine; we like each other! Here's what we're having:

Turkey (duh!) -- I bought an 11 pounder, so it will fit in my rotisserie. Keeps the breast very moist.

Apple-Walnut Dressing, from 15 Minute Low Carb Recipes. I thought about making regular bread stuffing from low carb bread, with plenty of veggies and sausage added, which is what I've done in the past. But That Nice Boy I Married isn't a big fan, and I've been eating no grain at all lately.

Green Beans Almandine, or as we call 'em, Green Almond Beans.

Mashed Rutabaga -- I'm kinky for rutabaga!

Fauxtatoes -- pureed cauliflower with some of my carefully-guarded stash of Ketatoes added.

Giblet gravy, thickened with glucomannan, my new favorite fiber thickener.

Sugar-free whole-berry cranberry sauce. I made this the other day. Couldn't be easier. Just put a bag of fresh cranberries, a cup of water and a cup of Splenda in a non-reactive saucepan, and simmer till the berries pop. I added 1/4 teaspoon plain gelatin to thicken it up a little, but it's hardly essential.

Sugar-free Pumpkin Pie with Pecan-Praline Crust, from 500 Low-Carb Recipes. I varied it a little this year -- used Lakanto in the crust, and subbed 1/4 cup of sugar-free pancake syrup for part of the Splenda, to give it a New England-y taste. The pie looks beautiful!

Whipped cream, of course.

And leftovers all weekend!

Happy Thanksgiving!

Indeed, as the previous commenter has said... I am thankful for all the assistance your blog and books have given me to lose weight and stay healthy! Hope your holiday was amazing. I brought two fabulous Dana recipes to my family's dinner - Pumpkin Cheesecake (this never fails to flip people out at how good it is - nobody believes it's low-carb or sugar-free) and Cranberry Chutney (I added some ginger paste and substituted PureVia sweetener for some of the Splenda, because it has an orange-like flavour). My big indulgence for the day was some Brie baked in puff pastry, but I convinced Mom to use sugar-free apricot preserves, at the very least... haha.

I notice you used Lakanto... what can you tell me about that? I'm so very curious! ^_^

A very happy Thanksgiving to you. Since this is the season to show our gratefulness to others, I just want to take the opportunity to tell you how much I appreciate all your books and all the work you have done to promote low glycemic eating.

I have Dr. Rob's newest book (The Low Starch Solution to Diabetes), and I really appreciate your recipes and chapter on low starch baking.

Because I am on his glycemic load diet, I use many of your recipes. Since I am lacto/ovo vegetarian, I just substitute meat substitutes like Quorn and Morningstar Farms products for the meat in your recipes, leaving out the salt (these products have added salt), and the recipes come out terrific.

I certainly hope you continue to write more books and also continue to team up with Dr. Rob.

I love this way of eating and having your wonderful recipes makes it so much easier. I love not having to count anything, just knowing what I should and should not eat! Like you, I am pre-diabetic, and have no doubt I would be a full blown diabetic right now, had I continued on with my prior low fat/high carb way of eating.
