Daily Menu January 5th, 2008

Breakfast:

The same yummy mushroom/onion/liver/fried egg thingie I did earlier in the week. I still had livers and mushrooms in the fridge, and who wants to let them go bad?

Lunch: None. That Nice Boy I Married and I were out at the home improvement store, and I didn't get around to it. Which is why I was ravenous when we got home, and immediately had a huge dinner of...

Dinner:

A whole rib eye steak! Friday night I'd had to thaw a package of three steaks to get one to serve, and I screwed it up, and ended up with thawed steaks in the fridge. (I'd meant to thaw them only enough to break the three apart and throw two back in the freezer.)

But I'd promised I'd do something more interesting, so I made this to put on top of the steak (this is actually double what I made, and should do for 2-4 people.)

Blue Cheese Mushrooms

2 teaspoons olive oil
2 teaspoons butter
8 mushrooms, sliced
1 medium onion, sliced
2 cloves garlic, crushed
2 tablespoons crumbled blue cheese
seasoned salt to taste
pepper to taste
4 dashes tabasco sauce
1/4 cup chopped fresh parsley

This is easy! In a big skillet over medium heat, combine the olive oil and butter, swirling them together as the butter melts. Throw in the mushrooms, onions, and garlic.

Saute until the onions are starting to brown and the mushrooms have softened and changed color. Add the blue cheese, and stir till it's mostly melted in. Stir in the seasonings, and serve.

2-4 servings. Assuming 2, each will have: 150 Calories; 11g Fat; 4g Protein; 10g
Carbohydrate; 2g Dietary Fiber

I pan-broiled the rib-eye in a very hot frying pan until it was crusty-brown outside and still pink in the middle, topped it with the mushroom mixture, and devoured the whole darned thing. Which was, I admit, wretched excess. Also the reason why having eaten at 6, I wasn't hungry again until very late, when I ate

Tea
Sparkling Water
Dry Red Wine

Daily totals: 2154 Calories; 132g Fat; 119g Protein; 68g Carbohydrate; 11g Dietary Fiber

I've been gone awhile

I had great success with low carbing for several years and then decided I could manage eating a little sugar. This turned into a year long eating free for all..I am having trouble getting back on the wagon..suggestions welcome.

Starting over

I completely understand the pickle you are in. I did the same thing. I went drastically off LC to celebrate my birthday. It took me 8 months and all the weight I had lost plus another 15 to get back going again. I was having a really hard time starting over but New Years 2008 my husband started to LC as well. That's the same day I had RESOLVED to start over or continue to watch myself die pound by pound. I was amazed at how much easier cravings and the other stumbling blocks were easier to overcome by leaning on a partner. My suggestion would be to find someone you can partner up with either in your own little world or the cyber one!

Back on the wagon I hope

My husband low carbed with me and we were both successful but when I went off the diet, he did too (I do the cooking). My biggest problem is eating anything that my body suspects is sugar..desserts are a food group to me! I can recognize clearly the foods that set me on an eating binge and so I have rid the house of those things. I guess we all respond differently but I find the fruit is one of the main things that will set me on an eating frenzy. To hear people say they can eat one cookie or just need a taste of a chocolate cake to be satisfied is so frustrating. I guess I will never be one of those "one bite" people.

Ohhhh those mushrooms sound fantastic!
